Whisk the egg yolks with salt and vinegar and slowly add the oil while whisking. Season to taste with mustard, salt and pepper. 

Finely chop the garlic cloves and grate the zest of the lemon. Season the mayonnaise with garlic, lemon zest and lemon juice.
