Roasted baby potatoes with fish roe, smoked cheese and dried bacon

Ingredients

30 small potatoes
200 g air dried bacon
200 g smoked cheese
50 g cream
½ teaspoon of grated nutmeg
1 clove of garlic
300 g fish roe
A bunch of Sakura cress or watercress
A small bunch of chives
Salt and pepper

Cooking instructions

Roast the potatoes in the oven until cooked (about 25 minutes at 190°C). Slice the bacon into thin strips and fry until crispy. Mix the smoked cheese, cream, nutmeg and crushed garlic. Season with salt and pepper.

Split the potatoes by cutting a little cross in the bottom and pushing down on them to open them. Add the smoked cheese, fish roe, bacon, Sakura cress/watercress and finely-chopped chives.
