2 kg shell-on prawns, thawed
400 ml soya sauce
200 ml acacia honey
100 g fresh ginger
1 bunch of coriander (optional)
2 kg mixed vegetables (e.g. courgettes, tomatoes, aubergine, red onions, red peppers and mushrooms)
500 g feta
1 bunch of rosemary
4 cloves of garlic
vegetable oil for frying
salt and black pepper
Roughly chop the vegetables and fry them in a pan with oil and rosemary for 20-25 minutes. Season to taste with crushed garlic, salt and pepper.
Sprinkle with crushed feta before serving.
Marinate the prawns with soya sauce, honey and ginger. Fry the prawns for approx. 4-5 minutes until they are well heated.
Add the chopped coriander.
Serve the prawns immediately with the warm ratatouille and possibly toasted bread with a crème fraiche dip.
