250 g shrimp
1 pomegranate, peeled and seeds separated
1 bag of mixed baby greens, e.g. mini kale
0.5 dl olive oil
salt and pepper
Mix pomegranate seeds with lime juice, olive oil, salt and pepper. Dice the apple and add them to the dressing. Dice the avocado as well and gently mix them with the apple dressing. Finally, add the baby greens as well.
Serve the apple salad with shrimp on top and sprinkle with chopped chives.
