Ingredients

2 fillets of Greenland turbot

1 chili finely chopped

3 tbsp lemon juice    

2 tbsp sesame seeds 

1/4 bundle chives, finely chopped

1 tbsp capers, crushed

Red radish in thin slices                                     

3 pickled red onion

2 mangos

2 avocados

4 green apples

Tip

Serve with an orange or raspberry vinaigrette

Cooking instructions

Mix the diced Greenland turbot, chili, sesame seeds, chives and capers and season with salt, sugar and lemon juice.

Dice the pickled red onion, mango, avocado, green apples and red bell peppers and marinate it with lemon juice to preserve their colours.

To plate, place a round form and fill one side with the chopped fruits and vegetables and the other side with the Greenland turbot tartare to form a circle. Garnish with finely sliced radishes.

Tip

Serve with an orange or raspberry vinaigrette
