Royal Greenland Seafood at Christmas dishes

In Greenland, as in Denmark and most of Europe, Christmas is the biggest feast of the year. Shrimp Cocktail is introduced as one of the popular Christmas dishes and it is easy, beautiful and perfect for a party. Cold water prawns from the Arctic Greenland have a firm texture and a unique sweet taste. Royal Greenland’s prawns and lumpfish roe are used for developing the recipes.
Shrimp Cocktail with lumpfish roe
Ingredients (for 4 persons):
- Prawns - 300g
- Green asparagus - 12
- Lemon - 1
- Romaine lettuce -10 leaves
- Extra virgin olive oil
- Salt and pepper
- Thousand island dressing
- Lumpfish roe
- Dill (decoration)
Preparation:
- Boil asparagus for 1 min. and cut into bite-sized pieces.
- Peel the lemon thinly and boil in the salt water. Leave the lemon peel in the water. Slice the remaining lemon.
- Remove the stem of romaine lettuce and chop. Mix the lettuce with dill, asparagus, shredded lemon peel, and sliced lemon and olive oil. Add salt and pepper to taste.
- Put (3) in a glass with prawn, lumpfish roe, and dressing. Decorate with dill and serve.
